stuff you need
  1. 500g chicken mince (or any mince!)
  2. 1 brown onion chopped finely
  3. 1 carrot peeled and grated
  4. 1 tsp. oregano
  5. 1 tsp. basil
  6. 1/2 tsp. thyme
  7. 1tbs. tomato paste (check the ingredients and make sure it is 100% tomatoes)
  8. 1 egg
  9. salt + pepper to season
  10. coconut oil for the pan
now what
  1. Place all ingredients into a mixing bowl and mix until well combined.
  2. With wet hands (so the mixture doesn't stick to your hands...yuck!) roll the mince mix into twelve large balls.
  3. Heat the coconut oil in a large fry pan on medium heat.
  4. Place the rissoles into the pan and squish down a little.
  5. Cook for seven to eight minutes or until lightly golden.
  6. Flip and cook for a further seven minutes or until cooked through.
