Paleo Chocolate Brownies Recipe.

Is anyone else struggling this winter? We have to admit that the cold is really getting us down. Being annoyed at the wind, grey clouds and wet socks is taking up head space that could be better used for new recipe development like these amazing Paleo Chocolate Brownies.

In fact, when the day is over, all we really want to do is cook up a warm comforting meal, put on our onesies and slippers and fall in a heap (please tell us we’re not the only ones…?)

As inviting as our onesies are, we are keeping warm by hitting the gym at least once a day and it seems we have a new love: BodyBalance (actually we have re-discovered it, BodyPump + BodyBalance has long been c’s all time favourite work out combo).

So what is it? It’s a mixture of tai chi, yoga and pilates (you’re probably asking why they didn’t call it togalates…we wondered the same thing!?) The best part about BodyBalance is that it is done to music (YAY!) We don’t know about you but there have been way too many awkward moments in a yoga class where the person next door is breathing a little too heavily…(we can also think of worse bodily functions that may occur in a quiet yoga room…)

Anyway, BodyBalance is keeping us warm this winter and we have been doing it three times a week. Here’s why we love it:

  • With weights, RPM and BodyPump all part of our weekly exercise routine, we are probably two of the most un-flexible (is that a word?) people you will EVER meet. Slowly but surely, BodyBalance is helping us reach our toes.
  • It clears our head. The best part of the class is what they call ‘relaxation’. 10 minutes of lying down at the end and doing nothing…we love this because we never just lie down and do nothing…except when we sleep.
  • The music. There are some geniuses at Les Mills who put together the choreography and the music. Every release has something new to try and a song to sing along to.
  • Anyone and everyone can do it. BodyBalance is low impact and there are always options for people with injuries.
  • It works your muscles. Sure our weight sessions and pump classes do this too but BodyBalance gets them in a totally different way. You are holding poses, stretching and there’s a huge focus on core stability (think summer…think bikini).

Oh – another reason we love it is because of our amazing instructor (he eats paleo too and taste tests some of our recipes!)

And there’s us, doing our best with the flexibility that we have (not much).

stuff you need
for the brownies
  1. 350 g (12 oz.) sweet potato, peeled, cooked and pureed.
  2. 5 eggs
  3. 1 cup macadamia nuts roughly chopped
  4. 1/2 cup of raw cacao powder
  5. 1/2 cup of coconut flour
  6. 1/3 cup melted coconut oil
  7. 3 tbs. honey or rice malt syrup
  8. 1 tbs. cinnamon
  9. 1 tsp. vanilla extract
for the frosting
  1. 100 g (3.5 oz.) pitted dates, soaked in boiling water for at least 10 mins, then drained
  2. 1 avocado
  3. 1/4 cup of almond milk
  4. 2 tbs. raw cacao powder
  5. 1 tsp. vanilla extract
  6. extra sweetener if required

for the brownies
  1. Preheat your oven to 180°C (350°F).
  2. In a mix master or blender mix the sweet potato and eggs until fluffy (this will be for around two minutes on high).
  3. Add the honey, coconut oil and vanilla and mix well.
  4. Sift the raw cacao powder, coconut flour and cinnamon into the mixture.
  5. On low speed, mix the batter until well combined.
  6. Add the macadamia nuts and stir well.
  7. In a lined slice tray (we used a square, 20cm x 20cm), pour the batter in and smooth the top evenly with a rubber spatula.
  8. Place into the oven for 15 minutes.
  9. Once cooked, allow to cool on a wire rack before spreading the frosting evenly on the top.
for the frosting
  1. In a food processor mix the soaked (and drained) dates until a smooth paste forms.
  2. Add the flesh of the avocado and mix again until really smooth.
  3. Add the vanilla extract, almond and whiz again until combined.
  4. Now to make it chocolatey! Sift in the raw cacao powder and mix until the mixture turns glossy and smooth.
  5. Make sure you leave some on the sides of the bowl (for your taste bud pleasure).
  6. Spread evenly onto the cooled brownie.
  7. Cut the brownie into squares. We served ours with coconut yoghurt, fresh strawberries and toasted coconut (just like a choc brownie sundae!)
